Mix together:
1 cup whole wheat pastry flour
2 cups all purpose flour
4 tsp baking powder
4 tsp ground cardamom
2 tsp cinnamon
1 tsp all spice
¾ tsp nutmeg
½ cup dried raisins
½ cup walnuts
ground dried orange peel as desired

In a separate bowl, combine:
2/3 cup canola oil
½ cup maple syrup
2 tsp vanilla
blended: 5 tsp. ground flax seeds mixed with 2 ¼ cup apple juice

2 ½ cups grated carrots

Combine all, mix well. Bake 40-50 minutes at 375F. Cool 30 minutes.

Glaze: 2 tbs maple syrup, 3 tbs lemon juice
