Basic Pancakes

Mix together in a bowl:
1.5 cup flour
3 Tbs. sugar
1.5 tsp baking powder
1/2 tsp salt

In another bowl, mix together:
1.5 cup milk
3 Tbs canola oil or melted butter
2 eggs
1/2 tsp vanilla

Pour wet over dry and whisk together until thoroughly blended. Spoon 1/2 cup batter onto warmed griddle for each pancake. When the top is speckled with bubbles and some have opened, flip and cook until second side is light brown. Serve immediately or keep warm in an oven at 200.
